Grandma’s Christmas logs … gluten free

As a kid one of my favorite cookies of all time was my grandma Kathleen’s Christmas logs. Some people call this kind of cookie a wedding cookie…. but whatever you call them… I call them delish ❤️

Gluten free Christmas logs made with love & grass fed butter

I updated the recipe so now it’s gluten free & that will probably just totally make your day.

Gluten-free Christmas logs 

  • I cup softened butter (Kerrygold)
  • 1/2 cup confection sugar
  • 2  cups chopped pecans
  • 2 cups Pamela’s gf artesian flour
  • 1 tsp vanilla (Here is my homemade recipe)
  • 1 egg yolk (only happy hens)
  • 1/2 tsp baking powder
  • 3 pinches of Himalayan salt

Cream butter, sugar, salt together. Add vanilla & yolk continue to cream. Add flour, baking powder & nuts.

Portion out with a small ice cream scoop & shape into logs with your hands. Place on parchment. Cook at 325′ for 15-20 minutes & cool….

Roll in confection sugar & share with your family ❤️

I have to admit… That when I was a kid I would hide under the table at my grandma’s house & just eat one after another…. Now I just don’t sit under the table.
