Lemon curd tarts

I have been gluten free for about 8 years. It was a decision I made not because of any disease process or diagnosis. It just was something that I kept on hearing in the back of my mind…. So I stopped & truly notice incredible changes in my overall health. I had more energy, better digestion, clearer skin… Yep! Pretty much I felt amazeballs!

Fast forward to this year… I had heard from a few different sources that there was a heritage wheat called Einkorn wheat that people who were gluten sensitive were able to eat because it had the original number of chromosomes as
