Super easy Einkorn crepes 

I have been off of gluten for about 7 years. I noticed that my body just works way better when it is not inflamed& gluten is just inflammatory. Just recently I have been looking into the scientific differences in the wheat that our ancestors ate & the wheat of today. Needless to say all that genetic splicing has created a modern wheat that nobody can or should eat well. Einkorn is a wheat that still has the same number of chromosomes as it did when we were hunters and gatherers. In fact it is the same exact variety!

I love cooking with my girls… these crepes were so easy & delish!

Einkorn Crepes

  • 1/2 cup Einkorn flour
  • 1/8 tsp Himalayan Salt
  • 1/4 tsp vanilla
  • 1/4 tsp maple syrup
  • 1/4 tsp honey ( we have a honey bear with both in it😍)
  • 2 fresh eggs
  • 1/2 C. Milk or alternative

Blend well … Use a non-stick pan (I like cast iron) with butter to cook crepes. Just swirl the batter around in the pan to spread it out. Flip once & serve with your fave ingredients.

Some of my fave crepe stuffing…

  • Stewed apples (recipe below)
  • Ham & cheese (with mustard)
  • Spinach & cheese
  • Gruyere & figs

Stewed cinnamon apples

  • 2-3 peeled & sliced apples
  • 1-2 T butter
  • 1/4 tsp cinnamon 
  • 1/4-1/2 tsp of the maple honey blend from above
  • 1/2 tsp vanilla
  • Pinch of salt

Cook over medium heat in a covered pot until starting to get soft… Take top off to reduce moisture… Serve with yummy crepes❤️
