Chicken, bone broth & wild rice soup… Salty Air & Glitter Style

This crazy cold spring weather on the East coast is driving me into the kitchen making soup! Usually I make a wonderful pot of soup in my Le Cruset stockpot… But this time I kicked it up a notch with wild rice & bone broth . I usually have my freezer filled with glass Ball jars of beef & chicken bone broth to add to my soups. Bone broth is an amazing way to increase your dense nutrients, heal your gut & restore your joint health.

It is super easy to thaw the jars in a warm water bath to get them loose enough to get out of the jar. I use the pint & 1/2 wide mouth jars that come in a package with asparagus on it… Here is a link

Chicken & Wild rice bone broth soup

  • chicken sliced or shredded ( I usually use the last bits from my roasted chicken)
  • chicken bone broth or just plain stock
  • One chopped onion, 3-5 peeled & chopped carrots, 3-4 stalks chopped celery
  • 2 bay leaves
  • 1-2 T grass fed butter
  • 2-3 T olive oil
  • 1/2 cup green lintels
  • 1-1 1/2 cup brown rice ( I freeze pre-cooked servings)
  • 1/2- 2/3 cup wild rice uncooked
  • 1-3 T gluten free low sodium organic tamari
  • Himalayan salt & fresh pepper to taste

Start with butter, bay leaves & onions…. Add olive oil, carrots & celery until beginning to soften . Add stock, lentils, brown rice, wild rice & let cook on medium for about 20 minutes. Season with tamari, Hym salt & pepper. Add chopped & shredded chicken & continue to cook on low until done…. This takes about an hour total time. Touch up seasoning & feed your soul❤️
