Probiotic Salsa… Salty air & glitter style

This is my favorite way to preserve all those amazing cherry tomatoes that I get in my summer CSA ( customer supported agriculture) from a local organic farm.
This is a lacto-fermented salsa that can be kept in the fridge all winter. It gives a really nice flavor when I add it to my guacamole. I also love to bring it as a hostess gift when I am invited to friends homes…. Because what says thank you like a glass Ball jar of probiotic salsa!!!?!

Probiotic Salsa

  • cherry tomatoes
  • onions
  • lime juice
  • jalapenoes
  • cilantro
  • olive oil
  • Himalayan salt to taste

Chop onions in food processor add tomatoes & process until chopped well but not too smooth. Add the other ingredients until you have a salsa that tastes good to your palette. Place in Ball jars with about 1 inch at the top. Cover with about a 1/4 inch of olive oil & sit on the counter for 3-5 days with the lid on very loosely . Sometimes you will need to push the tomatoes down… Refrigerate & enjoy all winter long.

Probiotics are crucial for whole body health especially when they come from a plant source. Try to find good organic sauerkraut, kimchi or any lacto-fermented veggies to help your body repopulate its intestinal flora. This is one of the keys to a healthy body & overall vitality.
